Since I posted on facebook that we have been cooking and have some successful new recipes, people have been asking for the recipes. So here are a couple of them.
First up is a healthy recipe from my friends at Beachbody.com. This is called Tasty Orange Chicken, however it is not like the asian orange chicken that you might get at Panda Express. It has more of a spanish flare to it so I made some alterations, I will post the recipe as is and then I will write the changes that we made to it.
Tasty Orange Chicken
4 boneless, skinless chicken breasts
2 Tbsp. honey
1 Tbsp. orange juice
1 Tbsp. ground cumin
1 Tbsp. garlic, minced
Salt and pepper
Preheat oven to broil. Mix honey, orange juice, cumin, garlic, and salt and pepper to taste. Coat chicken breasts with mixture. Broil chicken close to heat, about 4 minutes per side, brushing twice with cumin mixture. Makes 4 servings.
Preparation Time: 10 minutes
Devin & Shellies Changes: We doubled the recipe to feed our whole family HOWEVER we did not double the cumin because I thought that it had enough in it already. I thought this was a better ratio (or possibly even a little to much cumin) and I do like Cumin.
Also I served it with rice and Avocados (and the avocados were amazing with this dish).
We cubed the chicken instead doing it on whole breasts so the kids could eat it better but this also meant that more surface area was coated with the sauce (possibly why the cumin was so strong).
